Apple Cider Glazed Corned Beef With Roasted Root Vegetables

A slight twist on Classic Corned Beef Dinner, this recipe features a colorful medley of root vegetables and a bottle of Guiness to perfectly complement your meal. Feel free to modify by adding your favorite root vegetables.

Directions

  • Prepare the corned beef using any method from the Corned Beef Cooking Guide.
  • While the corned beef is cooking, make the apple cider glaze using the following directions:
    Add the apple cider, honey, bay leaf, and brown sugar to a pan. Simmer on medium heat for about 20–30 minutes, until the mixture has reduced and darkened slightly. Reduce the heat and add the mustard, cinnamon, clove, ginger, and black pepper. Stir and remove from heat.
  • When the corned beef has finished cooking, heat an oven to 425 degrees.
  • Toss the carrots, parsnips, turnips, sweet potatoes, and onion with olive oil, garlic salt, and additional salt & pepper. Place all vegetables on a sheet tray and roast in the oven until fork tender.
  • When the corned beef has finished cooking, either preheat an oven or broiler to 400 degrees, or use the oven that is roasting the root vegetables.
  • Place the corned beef on a tray and pour enough of the apple cider glaze over the top to coat the corned beef.
  • Place the glazed corned beef in the oven. After about 5 minutes, add more glaze and continue cooking until the glaze bubbles and is slightly caramelized.
  • Then remove the corned beef from the oven and place on a cutting board. Cover it with foil and let it rest for 20 minutes. 
  • When ready to serve, slice the corned beef against the grain and serve with the roasted root vegetables

  • 2 large carrots peeled and cut into 1-inch pieces.
  • 2 parsnips peeled and cut into 1-inch pieces
  • 2 medium turnips peeled and cut into 1/2-inch pieces.
  • 2 large sweet potatoes, peeled and diced 
  • 1 onion peeled and quartered
  • Garlic salt
  • Salt & pepper
  • Olive oil
  • 1 cup apple cider
  • ½ cup honey
  • ½ cup brown sugar
  • 2 tablespoons mustard
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground clove
  • ¼ teaspoon ground ginger
  • ½ teaspoon ground black pepper 
  • 1 bay leaf
