Corned Beef Quiche

Add a Parisian touch to your next family dinner with a delicious quiche made with diced or shredded corned beef.

Directions

  • Preheat your oven to 325 degrees.
  • Grease a pie tin with butter or oil. Lay the pie dough down into the tin and press into the corners. Use a fork to dock the base and walls of the dough. Place into the freezer for 30 minutes.
  • Add the diced onion and 1 tablespoon of butter to a pan and cook until slightly caramelized. 
  • In a large bowl, mix the eggs, heavy cream, thyme, nutmeg, cayenne, and salt and pepper. 
  • Remove the pie dough from the freezer.
  • Sprinkle the grated gruyere or Swiss cheese, corned beef, and onions across the bottom of the dough. Pour the custard into the pie tin.
  • Place the tin onto a sheet tray, and place into the oven on the middle rack. Bake until the quiche is barely set and jiggles in the center, 35–55 minutes.
  • Remove from the oven and allow to rest for 15 minutes. Slice and serve.

Ingredients

  • 1 pie dough, store-bought or homemade
  • ½ cup cooked Grobbel’s Premium Meats cooked corned beef, diced or shredded
  • ½ pound grated gruyere or Swiss cheese
  • 5 eggs
  • 2 cups heavy whipping cream
  • 1 small onion, finely diced
  • 2 teaspoons fresh thyme, minced (optional)
  • Pinch nutmeg
  • Pinch cayenne pepper
  • Salt and black pepper
  • Butter
