WHAT IS FLAT CUT?
The flat cut of a corned beef brisket is long, thin, and is generally a larger piece of meat than the point cut. Because it’s leaner than the point cut, it slices wonderfully well. The flat cut is what one generally envisions when picturing beautiful, uniform, rectangular slices lying next to a side dish like cabbage.
